Fig Leaf Powder 

Fig leaves are fragrant, fresh and herby, adding a toasty almond, vanilla-coconut flavor to desserts and savory dishes alike. Combine fig leaf powder with other ingredients as you would other spices and seasonings.  

INGREDIENTS 

  • A dozen fresh fig leaves, washed and dried

INSTRUCTIONS 

  • Pick fig leaves, rinse with water and pat dry. Set oven to 250.  
  • Line baking sheets with parchment paper and cover with fig leaves, spreading them out so they don’t overlap too much. Bake for 15-20 minutes, ensuring the leaves are completely dried. They should be crisped and fragrant.  
  • Remove stems then blend into a powder using a spice grinder or food processor. You can periodically sift and re-blend until the mixture is very fine. Keep in a sealed container. 

USES 

  • Sugar: Mix 2-3 tsp. of fig leaf powder with sugar. Substitute ¼ – ½ the amount of regular sugar for fig leaf sugar in cookie, cake, and muffin recipes. 
  • Salt: Mix 1-1 sea salt and fig leaf powder to sprinkle on seafood dishes.  
  • Herb mix: Combine about 1 tsp. with other herbs, oil, and vinegar or citrus for use in salad dressings and marinades.  
  • Smoothies: Add ¼ – ½ tsp. to smoothies
