Nectarine Basil Syrup

Simple syrups capture the tastes of summer, especially when you have more yield than you know what to do with, making good use of fruits before they reach over-ripeness. This quick, 4-ingredient recipe makes an lovely topping for yogurt or ice cream. Use as a base for mocktails, cocktails, or Italian sodas. Add a dash to homemade salad dressing for an extra flavor boost. Experiment with different amounts and types of sweetener or using other spices and seasonings, such as ginger, cinnamon, mint, and more. Enjoy!  

Nectarine Basil Syrup 

INGREDIENTS
1 C. Brown Sugar
1 C. Water
1 C. Nectarines, sliced (1-2)
1/4 C. Basil leaves, chopped (6-8) 

INSTRUCTIONS
-In a medium saucepan over medium heat, dissolve sugar in water, stirring until the liquid clears. 
-Add nectarine slices and bring to a strong simmer (but do not boil), then reduce to low heat. Let simmer for 12 minutes, stirring periodically.
-Remove from heat and add basil leaves. Cover and steep for 10 minutes.
-Strain the syrup carefully to remove the fruit and basil leaves, then let cool completely.
-Store in an airtight glass container and refrigerate for up to 2-3 weeks.
